The key to successful meal prepping is to keep it simple. We all have busy weeknights where we get home later than we anticipated, are rushing out the door after work, or simply just don’t feel like cooking (and if we’re being honest, that last one happens at least a few times a week). When you plan easy, simple meals for your week, you’ll be able to stick with your meal plan no matter how crazy your days get. We’re always looking for quick, yummy recipes that we can pull together on a moment’s notice, so today we’re sharing our go-to meals with you. Here are our favorites:
“Open faced sandwiches in the oven. Grab a loaf of french bread from the store on your way home from work (or use whatever bread you have), top it with meat, cheese, veggies, mustard (and / or whatever you love) and pop it in the oven to bake for a little while. Broil it at the very end (be careful, it’ll burn fast) and your family has delicious, warm, lightly toasted sandwiches. We do this once a week and its so cheap and easy!” – Emily Ley, Creative Director
“Chicken & Apple chicken sausage + broccoli florrets + sliced potatoes (with olive oil and rosemary). Everything goes onto a baking sheet and into a 350 degree oven for 30- 40 minutes. Super easy…and toddler approved!” – Gina Hafley, Director of Marketing
“Steak salad – just veggies, steak, and some sort of balsamic dressing.” – Whitney Hawkins, Senior Designer
“Salsa chicken in the crock-pot is my go-to meal. Place chicken breast in the bottom of the crock-pot, and cover it with salsa (any kind will do!). Cook on high for approx. 4 hours, or until you can shred the chicken apart easily with a fork, and that’s it! I’ll either put it over a bed of greens for a yummy salad or use it for tacos. “Burrito bowls are our go-to meal on a busy weeknight. I’ll pull some chicken breast or ground beef from the freezer, brown in a skillet with some homemade taco seasoning (any recipe online will do, and they’re all spices you typically have on hand already!), and make a batch of rice. While the rice is finishing, I grab lettuce, salsa, sour cream, shredded cheese, and hot sauce from the fridge. And if we happen to have a can of black or pinto beans on hand I’ll open those up and warm them quickly. When the meat and rice are finished, my husband and I each assemble our own bowls and dinner is served!” – Brittany Werth, Director of Sales and Operations
